Skype has provided a detailed sound set-up guide to troubleshoot audio problems here:

Please follow their instructions to set the audio device to the appropriate Plantronics audio device for both playback and recording. For example the Voyager 510-USB would be listed as "PLANTRONICS BT ADAPTER".
